Traditional Balsamic Vinegar of Modena P.D.O. EXTRAVECCHIO
“Extravecchio”: aged over 25 years in batteries of barrels of successively smaller sizes.
Characteristics: dense and creamy, persistent and structured aftertaste, intense and aromatic scent.
Used grapes: Trebbiano. Barrels are certified by the Consortium of Protection, the product prides itself with a Protected Designation of Origin (PDO) status.
Ingredients: acetified cooked grape must. No dyes or preservatives, no artificial flavourings or thickeners.
No added sulphites, gluten free.
Uses: perfect with meat, roast, fish, cooked and raw vegetables, eggs, risotto, Parmigiano Reggiano, ice cream, Tortelli with ricotta or pumpkin, steak, generally with all raw preparations.
The PDO Balsamic Vinegars are naturally stable thanks to their acetic gradient, therefore they do not need any stabilizer, the potential occurrence of a slight sediment is a sign of its artisanship and genuineness, anyway it can be exploited by leaving the bottle at bain-marie with its cap open.
Maximum recommended storage 10 years (in a cool dry place). All Traditional Balsamic Vinegars of Modena PDO are certified by the Consortium of Protection.
