The “Tonda Gentile Trilobata” hazelnut, grown significantly in the province of Cuneo, particularly in the Alta Langa, where the main crop is located, differs from all the others for its structural characteristics, since it has a much harder and completely saturated shell. It is appreciated by the confectionery industry for its spheroidal shape, good shelf life, high peelability and for its fabulous aroma after roasting. The history of its cultivation is closely linked to the confectionery industry and, in particular, to the discovery of Gianduja, a precious blend of cocoa and hazelnuts.
